Khaman – Soft and fluffy steamed cakes

In every Indian household all family member either children or elder everyone loves Khaman. If you want Kandoi style fluffy and soft khaman then this article is for you.

Khaman is origin from Gujarat. It is very famous Gujarati farshan. Now this got so much Popularity that people from all over world love it. For the people who have confusion between dhokla and Khaman. So khaman is made of Gram flour and Dhokla is made of rice and dal flour. Non Gujaratis call it khaman dhokla. But for all Gujaratis, this two dishes are totally different.

Ingredients

  • 250 gram - Besan (2.5 cups) 

  • 400 ml - Water ( 2 cup water)

  • 20 gram - Salt ( 1 tbs )

  • 30 gram - Sugar ( 2 tbs )

  • 6 gram - Citric acid ( 1tsp lemon )

  • 15 ml - Oil ( 2 tbs)

  • 8 gram -  Tata soda ( 1 tbs )

     

  • 2 tbsp - Oil 

     

     

  • 2 tbsp - Mustard seeds

  • 3 to 4 - Green chilly

  • 5 tbsp - Sugar

  • 1 cup - Water

Directions

  • If you want perfect khaman every time then make sure proper measurement. First take 250 gram besan. 

  • In large mixing bowl add salt, sugar, lemon juice/citric acid and 2 tbs oil. Mix all this ingredients very well.

  • After that add besan and then mix all ingredients.

  •  Give rest to batter for 10 minutes. And add soda in it. mix well. After mixing for 1 minute batter colour will be changed.

  • To check consistency of batter dip a spoon in it. If spoon's backside is fully covered with batter then it is ready for steaming process. 

  • Now next step is steaming for that take one Thali and greace it with oil.

  • Pour batter in the Thali. cover half thali with batter not more than that.

  • Now put it in the steamer and steam it for 15 to 20 minutes on high flame.

  • Until khaman is cooking. Let's prepare temper. For that, add oil in the pan. and then add mustard seeds, hing, green chilly, sugar and water. Now our temper is ready.

  • Now put temper on khaman. And your fluffy khaman is ready. serve it with Coriander.
