When cheese met cake – Easy Mango Cheesecake recipe

Someone told us that we can add some gelatin or something that sets the dish into our ingredients in order to cook a number of dishes!
People made cheesecakes and a number of other dishes but one of those dishes became super popular! That recipe is no bake cheesecake recipe!

You don’t need to bake a cheesecake because you can simply set it in your fridge. But for old times sake, I’m going to cook this recipe and share it with you! I hope that I’ll be able to share minute details of this recipe which will be useful for you!

How was cheesecake recipe invented?

Cheese cake recipe’s history is as rich as it taste. As everyone says cheesecake recipe is invented in New York but this is not true. Over 4000 years ago cheese cake have been created on Greek island named Samo. In Greece, it is said that cheese cake has good amount of protein so it gave energy in body. During 776 B.C, One athletes been served cheese cake in Olympic games.

When Greece conquered by Roman, they modified it with combination of crushed eggs and cheese & baked it under hot brick. They took this recipe to Europe and with different region different cheesecake recipe came out.

Let’s start with Cheesecake Recipe:

Preparation time: 1 hour

Cooking time: 20 minutes

Serving: 2

INGREDIENTS:

  • 1 cup – Cream cheese
  • 1 cup – Hung curd
  • 1 cup – Whipping cream
  • ½ cup – Sugar
  • ¼ tsp – Lemon zest
  • 6 gms – Agar agar
  • ⅓ cup – Mango puree

For Base:

  • 1 ½ cup – Biscuits, crumbs
  • ¼ cup – Butter

Other Ingredients :

  • Ohp sheets
  • Mango fruit, slice
  • fresh Mint leaves
  • Cocoa powder
  • Icing sugar
  • Pomegranate pearls

Directions:

  1. To make you the recipe easily I’m using to use half a cup of sugar, I’m going to add half of it now and the rest I’ll add later. You can use a whisk but I already have a blender so I’ll use that. Make sure that it is chilled. Otherwise, your cream cheese will turn into butter.  You can make any cheesecake base if you follow this 1:1 ratio. This is the first part.
  2. Add lemon zest and mix it.
  3. In a small bowl, add agar agar and little water and soaked in it for 5 minutes.
  4. In a large pan, add little water, soaked agar agar and mix it well. Add sugar and mix it well.
  5. Then add Mango puree then switch off the flame and mix everything well. Transfer this into a bowl, let it come to a room temperature.
  6. Once the mango puree mixture is at normal temperature pour it into a cream cheese mixture and mix it well.

For base:

  1. To make the biscuit base add the glucose biscuits into a chopper, break them roughly with your hands while adding them, you can also do the same by adding the biscuits into a bag & then smashing them using a rolling pin.
  2. In a pan, add butter and let it melt completely.
  3. Add biscuits crumbs and mix well until all the crumbs are nicely coated.
  4. Press the crumb mixture into a cake tin, spreading evenly all the side; press flat.
  5. Place the mold in the fridge until you make the batter for the cheesecake.

Next process for cheesecake recipe:

  1. Pour the cream cheese mixture over the biscuit crust; smooth the top with a rubber spatula.
  2. Now tap it gently to get rid of any bubbles formed inside.
  3. And refrigerate it for 1 to 2 hours.
  4. After that, Place the ohp sheet in the center. and put cake on it.
  5. Garnished it with fresh mint leaves, cocoa powder and icing sugar.
  6. Now to decorate the cheesecake start placing the mango slices on the edge of the cheesecake from the top, making your way inwards in a circular motion.
  7. Mango cheese cake is ready. Let’s serve it!
